I finished the second recipe of my Helms Bakery assignment:  the brownie.  I have to admit, the recipe said margarine and I substituted butter.  And because I melted the butter on the stove top, I slightly browned it.  And like the blondie, I think it adds a little something.  There isn’t much else in these [...]

We had more of the chocolate biscotti tonight.  This time with the strawberry gelato that we were originally planning on making for the Iron Chef cook off.  But we ran out of time for the Iron Chef competition.  This was a nice cap off for a great evening with friends, Mona & Emma. I still [...]

I got the two thumbs up from the judges:  Al & my mom this morning at breakfast. 2 thumbs up = keeper. The double chocolate was subtle, mini-chocolate chips got kind of lost.  But I used extra brute cocoa powder from France which really made a difference.  I loved this recipe because there was no [...]

When I saw this recipe on Food and Wine’s web site, I knew I had to make it.  But with one major alternation.  Replace the milk chocolate with something darker.  Then I had to find the opportunity to make it.  So I invited people over for dinner.  It was a perfect dessert for 12 people, [...]

Special Topper

I thought I’d make a some cookies for my co-workers as a holiday gift.  I put them into a mini-loaf pan thinking that perhaps they’d prefer a bunch of chocolate cookies filled with chocolate chips, cherries and pecans over vegan banana bread.  Um, the bread is pretty darn good.  Al declared that I can just [...]

Happy Thanksgiving

I am thankful today that my mom is out of the hospital and doing well.  Her hospital stay slowed down the cupcake production and experimentation.  But now that she’s feeling better, I’m starting up again. I am also thankful that I have a husband who is a wonderful photographer and can showcase my cupcakes as [...]

For Halloween, I thought I explore creating some creepy cupcakes and boy did Al, my husband, and I have fun.  Last year, I tried creating some owl cupcakes.  It was the right theme, but the materials I used made it difficult.  This year, I used items such as marshmallows (not vegan), Reese Pieces, chocolate chips [...]
